We were Italian this weekend.....

Its Monday! Again! BOO! It'll be over soon enough though.... Hopefully.

Friday night Andrew & I stayed in an had a relaxing night. I made Lasagna. Its a new recipe of mine, I saw on someones blog. I'm sad to say I can't remember who's blog. Oops. :( But it turned out delicious!! My hubs said it was the best lasagna he's ever had. I love when I get those kinds of compliments from him. :)

Ingredients:

-hamburger meat
-marinara sauce
-lasagna noodles
-a block of cream cheese
-shredded Italian blend cheese
-Italian seasoning

Cook the hamburger meat. Drain the meat, then add in marinara sauce and let simmer for about 10 minutes. I used a jar of marinara sauce and added in some oregano & basil. Gives it a little extra flavor. Cook your lasagna noodles in a boiling pot. I only needed about half the box of noodles, maybe less. When noodles are done drain them, then lay them out on paper towels or a dish cloth. I used paper towels, be careful though the noodles kind of stick to the paper towel sometimes. Spread cream cheese on the noodles. This is the hardest part of the recipe. Cream cheese and noodles just do not agree. But trust me its worth it. Spray your baking dish with Pam. Pour in a layer of the hamburger/sauce mixture, then layer the noodles, then sprinkle the cheese on top of the noodles. & repeat until you fill up your dish. Let the top layer be the sprinkled cheese. Then sprinkle the Italian seasoning on top. Put in the oven at 375 degrees for 20 minutes. Or long enough to let the cheeses melt. Its done!

It was delish!

Then I did some more cooking on Sunday night. This was a rare occasion for me to cook twice in one weekend. I usually refuse to cook Friday through Saturday.

I made my homemade alfredo sauce for chicken fettuccine. In my husbands words "its like crack..." lol.

Ingredients:

-1 stick of butter
-2 tbsp cream cheese
-1 pint of heavy whipping cream
-3/4 cup of Parmesan cheese
-1 tsp garlic powder or salt
(I also add in a little pepper)

(I didn't say it was healthy at all....lol)

I have had trouble getting the sauce to thicken up. But last night I put the heavy whipping cream in and then the cheese, let this sit for a couple of minutes, then the rest of the ingredients. It seemed thicker than usual. I don't know if putting the cheese in first made the difference or what. It does thicken up once you let it sit for a few minutes also. But its not soupy once you mix it with the noodles and chicken. Its uh-mazing! & so easy.

My Ma's Enchiladas

I made these this past Wednesday night. My hubs loved it! The recipe is actually my Moms. She doesn't cook very often but this recipe was always one of my fave's growing up. This recipe is super easy! Y'all know I like easy. I am not about being in the kitchen all night.

What you will need:

-1 box of Hamburger Helper Enchilada mix

-Large tortillas

-Hamburger meat

-1 can of enchilada sauce (i use the Old El Paso brand)

-shredded mexican cheese or cheddar

First brown your hamburger meat. Then follow the directions on the Hamburger Helper box. When you're done with this, spoon the mixture into the tortillas, roll them up and place them in a Pam sprayed baking dish.
Once you have put all the rolled up tortillas in the dish pour the enchilada sauce all over the tortillas, then sprinkle the cheese over the sauce. Put the dish in the oven at 350 degrees just long enough to melt the cheese on top. These are really good served with sour cream also.

Your husband will sing your praises for making this! I promise! Or just make it for yourself! ;)

Crock Pot Chicken Tacos

This stuff is so good y'all! I know that picture might not look too appetizing but trust me its wonderful. & also its SO EASY! If you're like me, you don't want to be in the kitchen forever. Some days I enjoy cooking. I said SOME. Other days not so much... So this is perfect for a day you want to come home from work be able to have a quick meal and relax.

Ingredients you will need:

-Chicken breast/cutlets/tenderloins (take your pick)

-Packet of Ranch Dressing mix

-Jar of salsa

-Pam spray

-Tortillas

-Whatever toppings you want on your taco

Spray your crock pot with Pam. Throw in the chicken. Sprinkle the ranch all over chicken. Pour in the salsa.
Cook on low all day or high for 3 to 4 hours. When done cooking shred the chicken with 2 forks.
Voila! All done! Told you it was easy...

I used the chicken cutlets for my hubs & I because we only need enough for the 2 of us. We still had some left over, which I brought for lunch today. Yum!
